Fin Che Venga is a rosé from pure Nocera grapes, gently pressed and made sparkling with the Classic Method. It pays homage to the history of Furnari and the motto of Roger II of Hauteville. It shows a bright cherry-pink with fine and persistent perlage. The nose offers notes of lychee, blackcurrant, grapefruit, citrus blossom, yeast and bread crust. On the palate it is fresh, savoury and structured, with elegant bubbles, citrus hints, a mineral finish and bitter almond.

Vinification and ageing
Destemming and cold maceration at 6°C for 12h; gentle pressing up to 0.6 bar; fermentation at 14–16°C with selected yeasts. Ageing in stainless steel for 6 months (natural malolactic); tirage in late spring and second fermentation in the bottle for 2.5 months at 14°C; ageing on the lees for at least 24–30 months; riddling on pupitres twice a week for 1.5 months; disgorgement and dosage.
