Tasting notes

Here's a toast to an encounter destined to become legend: that between a humble farmer from Furnari and a king who entrusted him with his wounded greyhound. From dedication and loyalty came the gift of these lands. The wine is an intense ruby red with garnet reflections. The nose is complex, with notes of red and blue berry jam, spices, mint chocolate, leather and tobacco. On the palate it is fresh, with soft tannins, good structure and long persistence, with hints of liquorice and caramel.

By hand, between the second half of August and the first half of September.
Vinification and ageing
The grapes are macerated for 17–18 days at 27°C. Daily pump-overs; after the third day the first délestage is carried out, the second when fermentation is almost complete. After draining, the grapes are gently pressed. Ageing takes place in small 225-litre French oak barrels for about 12–14 months and 6–8 months in the bottle.
